Cheesy Broccoli Quinoa

This is one of those comfort foods that you kinda feel good about eating.  It's got lots of quinoa and broccoli, but it's also loaded with cheese :)  It's warm, filling, and ooey gooey.  And, hey, it has broccoli in it so it's gotta be good for you!

Cheesy Broccoli Quinoa
8 Servings

3/4 cup uncooked quinoa
2 cups broccoli, cut into bite sized pieces
2 tbsp milk
1 cup sharp cheddar, shredded
2 oz cream cheese
Cream of Broccoli Soup
Black pepper
1/4 cup (1oz) freshly grated Parmesan

1.  Preheat oven to 350° - coat a casserole or 8x8 dish with cooking spray.  Combine the milk, soup, cheddar cheese, cream cheese and black pepper in a medium bowl.  Stir in the quinoa and broccoli until well combined.

2.  Spread quinoa mixture evenly in prepared dish.  Sprinkle with Parmesan and bake, 30-40 minutes.  Let cool 5-10 minutes before serving.  Enjoy!

Bon Appetit!

Extended Chicken Run - Part One

One of the best additions to our little homestead this spring was our new chicken run that Jason built.  It extends from their current run along the north side of our garden over to a nice, large area on the east side of our garden.

There is a large pine tree that not only gives them shade, but also keeps them safe from over head predators.
I'm looking at you, hawks.   I see you up there circling....

This gives the chicken so much more space!  They have lots of weeds and grass to eat, dirt to dig up and worms and bugs to find.

So nice to be able to have them out with more space and not have to worry about any type of predator getting to them.

This is just the beginning of what we have planned for our chicken run.  Stay tuned to see what we do next!
