Whole Wheat Pita Bread

The perfect accompaniment to homemade Falafel, Hummus, or Chicken Gyros are these delicious pitas.  With just a few simple ingredients you can make your own pita pocket bread at home!  I use my bread maker for this recipe, but you could definitely make them without one.  It will just take a little elbow grease ;)

This dough can also be frozen.  After it has been rolled into balls, rested, and risen, simply place the dough onto a large plate or cookie sheet and freeze.  Once frozen, transfer to a freezer bag.

Whole Wheat Pitas
Makes 12-18 pitas


Ingredients:

1 1/4 cups warm water
2 tbsp olive oil
1 tbsp honey
3 cups whole wheat flour
1 1/2 tsp salt
2 tsp yeast

Directions:

1.  Add all ingredients into a bread machine and choose the 'dough' cycle.  Once the dough is ready, remove and roll into golf ball sized balls, placing them on a flour dusted surface.  Sprinkle with flour, cover with a damp cloth or paper towel, and allow to rest and rise for 20 minutes.


2.  Preheat oven to 400 degrees and place a cookie sheet into the oven.  Using a rolling pin, flatten  each ball into a 6-8 inch circle.


3.  Once the pan and oven is to temperature carefully remove the pan and place a few of the rolled out pitas onto the pan, being sure they do not touch.  Place back into the oven and bake for 5-7 minutes - until puffy and beginning to brown.  Remove from the oven and repeat with the remaining bread until all are baked.  Cut the pitas in half and fill with whatever you desire, or dip into hummus. Enjoy!
